What’s fresh at the local farmers’ markets

LIKE seasonal produce? Then read on for what's ripe for the picking now on the Northern Rivers:

EGGPLANT

This versatile vegetable is in abundance during late summer. Chargrill to bring out the flavour and add it to salads, curries or use as a pizza topping. Fresh eggplant is available from Everest Farm (Mullumbimby/New Brighton farmers' markets), Summit Organics (Mullum/New Brighton). Jumping Red Ant (Mullum/New Brighton) and Glenyce Creighton (Mullum/New Brighton). Baraka Foods' (Mullum/New Brighton) authentic baba ganoush (eggplant dip) is another must-try.

CUCUMBERS

Perfect for adding cool crunch to a summer salad, cucumbers are also known for their ability to get rid of bad breath and according to some, can even cure a hangover if you eat a few slices before going to bed! Cucumber pickles are a great way to preserve a cucumber glut in the garden, and are delicious on sandwiches. Di Wilson, from market stall Pickle Chicks (Mullum), makes a beautiful bread and butter cucumber pickle with garlic, onion, chilli and bay leaves. Fresh cucumbers available now from Summit Organics (Mullum/New Brighton), Coopers Shoot Tomatoes (Mullum/New Brighton) and Jumping Red Ant (Mullum/New Brighton).

PUMPKIN

The local pumpkin harvest is on. Kyvale Produce (Mullum/New Brighton), Summit Organics (Mullum/New Brighton), Morrow Farm (Mullum) and Everest Farm (Mullum/New Brighton) will all have fresh pumpkin during the next few weeks. Keep your eye out for unusual varieties, such as the gramma, which sometimes pop up at Morrow Farm or Glenyce Creighton's organic stall (Mullum/New Brighton). Spice Palace (Mullum/New Brighton) makes a delicious pumpkin and macadamia dip - local organic pumpkin sprinkled with chermoula and olive oil and blended with local macadamia nuts.

Also in season: Apples, mangos, sweet corn, tomato, zucchini, kang kong, dragonfruit, rockmelon, passionfruit, stonefruit, beans, lychees, cucumber, squash, ginger, finger lime and capsicum.
