Stainzy makes his mark with two yummy cake recipes
OUR request to find out about what your favourite cake is and to share the recipe, wasn't overwhelmingly contributed to but we were impressed with what we got.
Thanks to Michael James Stain who sent in not one, but two of his famous 'Stainzy' recipes.
1. Stainzy's famous easy fruit tart.
2 nectarines sliced
2 plums sliced
3 Tb brown sugar
1 Tb crushed almonds
1 tsp icing sugar
1 1/2C plain flour
1Tb cold water
Mix and rub flour and butter by hand to the consistency of bread crumbs.
Add egg and water to mix to form a firm soft dough.
Roll dough into ball and wrap in glad wrap and put in fridge for an hour.
Roll out pastry flat, oval shape and place on a flat tray lined with baking paper.
Sprinkle crushed almonds onto the pastry and add sliced fruit to cover completely.
Turn the edges of the pastry over around the outside to form a lip.
Sprinkle with brown sugar.
Bake in preheated oven on medium heat until the tart pastry is a golden colour.
Remove and sprinkle with icing sugar and serve with ice cream.
2. Stainzy's famout banana bread
1/2C brown sugar
3 Tb butter
1C mashed banana
1 tsp bi carb
1/2 tsp cinnamon
1/2C crushed walnuts
1 1/2C SR flour
1 tsp baking powder
1/2 tsp salt
1/3C veggie oil
1 tsp vanilla extract
2 Tb brown sugar
2 Tb brown sugar
2 Tb butter
2 bananas sliced 2 cm thick
In a loaf tin put crushed walnuts and ingredients for caramel glaze.
In a bowl mix dry ingredients and wet to make a batter.
Don't mix too much.
Pour batter in loaf tin over the walnuts and sugar, butter and sliced bananas then place into a hot over for 30 minutes or until cooked.
Take out, let cool and turn upside down.
