Ricotta cake recipe

Ingredients

500g fresh ricotta

4 egg yolks

50g self-raising flour

75g sugar

1 tbsp lemon zest

1 tsp vanilla essence

85g sultanas, soaked in 2.5 tbsp

sweet liqueur for 5 mins.

Preheat oven to 180°C (fan-forced). Mix all ingredients in a large bowl. Pour into a prepared baking tin and cook for 30mins or until golden brown. Turn out onto a wire rack to cool.
