New Byron eatery serving it up strong
TO MAKE it in a town like Byron Bay, a new restaurant needs to stand out from the crowd.
So the owners of Pizza Bar Byron that opened in Jonson St last month, are continually tweaking the food and service at their new eatery.
Co-owners Gaudi Diaz, Laurie Rose, Sarah Newson and William Ennis bring a wealth of experience to the job.
All have been part of the team at the renowned Italian At The Pacific in Bay St and Mr Diaz began his career in hospitality at Mr Rose's Mocha Cafe.
"It's great to have a partner like Laurie who has a great depth of experience and really brings a lot to the business," Mr Diaz said.
"Our new menu has been written by head chef William Ennis who has worked in a number of Michelin hat restaurants and as a personal chef for royalty in the Middle East."
But even with his team's vast experience, Mr Diaz is still aware it can be a bit of a mystery knowing what it takes to create a great restaurant.
"It's a fine formula to get right," he said. "That's where we work so well as a team; we are continually tweaking things and making changes."
"That constant renewal is something that keeps the restaurant vibrant, our customers interested and the owners engaged in the business."
The restaurant has a broad menu based around Italian cuisine, opens at 7am every day and prides itself on doing great breakfasts as well as dinner.
"The breakfast market around here is hard to break into and it can take some time to get that breakfast crew in," Mr Diaz said. "Our breakfast has a bit of a twist with all our eggs served with freshly baked pizza bread.
"We also have a number of breakfast pizzas on the menu including our unique Eggs Benedict Pizza."
Pizza Bar Byron also has a corner pizza window that stays open until 1am weekdays and 3am on weekends.
"People can grab a slice of pizza and a coffee any time of the day and sit out the front," Mr Diaz said.
