Mmmm .... Melon and meat - a winning combination
SOME foods were just made for each other, like rockmelon and prosciutto.
Before you turn your nose up at what sounds like an unlikely combination, give this rockmelon bruschetta a try. You will be converted.

> 150g goat's cheese
> 1/2 tsp finely-grated lemon rind
> 6 slices sourdough or ciabatta bread
> 6 slices prosciutto
> 500g rockmelon, thinly sliced
> Balsamic reduction
Lightly chargrill the bread on a barbecue or grill plate.
Spread the goat's cheese on top of toast and place one slice of prosciutto on each, followed by a thin slice or two of rockmelon.
Sprinkle the lemon rind on top and finish with a drizzle of balsamic reduction.
