How to pick the perfect prawn this Christmas

ROBERT Stone is a man who knows what a good prawn should look like at Christmas, and now he wants the average shopper to know as well.

The owner of Stoney the Fishmonger has handed down his handy tips on how to pick and look after your favourite crustaceans in time for the festive season.

Mr Stone, who goes through 2.5 tonnes of prawns in the two weeks prior to Christmas, said residents in Toowoomba often make a couple of simple errors that can turn a great batch of prawns into poor lunch selections.

"The concern for me is that people will be sucked into a cheap price and end up with an inferior product come Christmas time," he said.

"The one mistake that most people make is to put ice directly onto your prawns, unless it's going to drain."

Mr Stone said shoppers should check the colour of the prawns and the strength of the feelers, saying discoloured prawns with broken feelers were often frozen too long.
