Delicious and easy gluten, dairy, soya, nut free cooking
NADA Farina, in my very poor understanding of Spanish and Italian, translates roughly to 'no wheat' or 'no wheat flour' - which is more than a small coincidence given it is also the name of the author of this cookbook: Gluten, Dairy, Soya, Nut Free Cooking.
Suspicious author's name aside, this is an excellent book for anyone wanting to cook for someone with a food allergy or intolerance.
It is from the UK but even the specialist ingredients required for some of the recipes are available easily here.
The author explains the nutritional and allergy information for each dish in plain English and always with a focus on healthy but always tasty food.
There are more than 80 delicious recipes, ranging in complexity and including entrees, soups, mains and delectable desserts.
The photographs are large, lovely and realistic; it is always pleasing when my productions come out looking close to the images in the book.
Of the recipes I tried my favourite was the Chocolate Mousse with Blueberries made with avocado. It was seriously rich, delicious and easy. It was free from flour, sugar, eggs, dairy, soya or nuts but packed with flavour and nutrients.
If you or someone you cook for has an allergy or intolerance which needs to be catered for, this book is a must for your cookbook shelf.
