Bagels will be sending Lilli to Italy

LILLI GILLESPIE knows how to make dough. Since April this year she has made and delivered bagels every Sunday and raised a whooping $3800 towards her school exchange trip to Italy in 2018.

With only $600 left to reach her target for the trip, Lilli isn't stopping making dough.

"She's a real baker,” mother Cath Gillespie said.

One Sunday they had 27 dozen bagels to make. Every month there is a speciality flavour. In November it is chilli and chocolate, as well as the staples of plain and cinnamon and raisin bagels.

Lilli rises at 6am to begin making the dough, boiling it and swirling it into bagel shapes before baking. Lilli has made cloth bags that are reused each time she delivers another dozen bagels. On Facebook go to the Evans Head Bagel Company and order a dozen for $12 which are delivered to Woodburn, Coraki, Casino and Evans Head.

"They are still hot when we deliver them,” Lilli said.
