Full time Sous Chef required at Treehouse on Belongil. Includes evening and weekend work in busy kitchen environment. Main tasks and responsibilities to include: • Working closely with the Head Chef, as the second-in-charge of kitchen operations • Managing and supervising all kitchen staff and kitchen operations • Planning and drafting menus, including seasonal menus and daily specials • Preparing, cooking and serving a variety of dishes • Ensuring all raw products and prepared dishes are of a high quality and standard • Dealing with any quality control issues • Overseeing the stock-take procedures and ensuring that appropriate food supply orders are made on time • Ensuring food is stored at appropriate temperatures and by proper methods for preservation and freshness • Ensure food allergies and intolerances are accommodated for and properly managed • Discussing any food preparation issues that may arise with management as well as kitchen and wait staff • Assist in preparing a budget and ensuring that food and labour costs come within that budget • Reviewing kitchen sales, and implementing measures to ensure such targets are met • Assisting in the process of hiring new kitchen staff as well as disciplining or terminating their employment where necessary • Training kitchen staff, including demonstrating specific cooking techniques and providing guidance on cooking procedures • Ensuring that appropriate hygiene, food safety and OH&S; standards are met • Liaise directly with customers when required. Must have a relevant Diploma level qualification + 2 years full time experience. Alternatively, 3 years full time work experience may be considered in lieu. Salary $62,400 pa. Byron Bay,
